Yes, it’s a CAKE!
That seriously looks like a real peanut butter and jelly sandwich, doesn’t it? No kidding, within 1 minute of seeing Sneh’s Cakewich (that’s what this is called) on Cook Republic, I had one-click ordered a Cakewich pan from Amazon. This blog turns 2 years old today and I’m celebrating with a fun, toddler-approved cake (at least the toddlers who live in my house loved it)!
As cute as it is, this cake tastes even better. In fact, I delighted in this pound cake as much as with the Meyer Lemon Whipping Cream Pound Cake I raved about a few weeks ago (yes, it’s been a pound cake kind of month). The cake itself is very moist and flavorful – even after five days at room temperature on my kitchen island – and that frosting is like peanut butter’s richer, sweeter, fluffier cousin. It’s definitely more than a gimmick, this cake is legit. If you’d like to see how I made this massive cake sandwich, check out today’s post on my other blog, Panini Happy.

Peanut Butter & Jelly Pound Cake
From the CAKEWICH silicone baking pan box
Prep time (including cooling): 2 hr 30 min | Cook time: 1 hr 10 min | Total time: 3 hr 40 min
INGREDIENTS:
Cake:
- 2 cup all-purpose flour (spoon flour into dry-measure cup and level off)
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 1/2 cups sugar
- 2 teaspoons vanilla extract
- 6 large egg whites
- 3/4 cup milk
Frosting:
- 1/4 cup unsalted butter, softened
- heaping 1/2 cup creamy peanut butter (I would not recommend using natural peanut butter)
- 3/4 cup confectioners sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup fruit jelly, slightly warmed
DIRECTIONS:
For the cake:
- Set rack at the middle level and preheat oven to 315°F.
- Grease and flour the inner bottom surface of your CAKEWICH cake pan.
- Combine the flour, baking powder and salt in a bowl, mixing well with a whisk.
- Whisk together the egg whites and milk by hand in a medium mixing bowl until just combined.
- In a heavy-duty mixer, cream butter and sugar until light and fluffy, about 5 minutes. Add vanilla and beat vigorously.
- Reduce speed to low and add one-quarter of the flour, then one-third of the milk mixture, mixing until just combined, scraping down the bowl and beater after each addition. Repeat until all ingredients are just combined.
- Scrape the bowl well with a large rubber spatula. Pour the batter into the CAKEWICH pan and smooth the top.
- Bake for about 60 to 70 minutes, until a toothpick inserted in the center emerges clean.
- Cool the cake in the pan on a cooling rack for one hour, then unmold it to finish cooking right side up.
For the frosting:
- Place the butter and peanut butter into a medium bowl, and beat with an electric mixer for several minutes until combined.
- Gradually mix in the sugar until combined.
- Add vanilla and beat for 3 minutes until fluffy.
To assemble:
- Using a serrated bread knife slice off the CAKEWICH “dome” then slice again through the center horizontally.
- Spread the peanut butter frosting on the first layer of cake. Spread a thin layer of jelly on top of the frosting.
- Place second layer of cake on the first, making sure the cut side is visible. For easier cutting, refrigerate cake for one hour before serving.
I’m not a baker, but my gave a friend a bear cake pan for Christmas! It tasted great!
Happy Anniversary! I haven’t had too many strange cakes. I’ve been itching to make one of those rainbow cakes though- perhaps this weekend!

I made a cake for a friend’s birthday once that was a big huge dinosaur. It took hours and hours to decorate but was so worth it. The look on his face was priceless!

I would love to win this pan! I have to say the most unusual cake I made was yesterday. A guy ordered it for himself for his birthday. (He is over 30.) It is a GI Joe cake. It has a big red cobra on it.

Unusual cake – a gigantic cupcake sized cake. How are you supposed to cut into that thing??!!
Shortly before my 18th birthday, I found out that I was born with only one kidney. So that year my birthday cake was a kidney cake. My mom bent an aluminum pan into a kidney shape. We made red velvet cake and kidney-colored frosting, completely with blue gel icing veins. It was gross and fantastic.
I think this recipe is the most unusual cake recipe I’ve ever seen………..I don’t sound very adventuresome do I?………….or maybe a bit boring?
The most unusual & for me the worst was a Green Tea cake. ACK!!! But this PBJ cake looks so fun.
The most unusual cake I’ve ever made was a tomato soup cake. It had a can of tomato soup added to a spiced cake mix with raisins added. I was really doubtful that it was going to taste good but it was SO awesome. All of my employees loved it too!!! They were shocked when I told them the “secret” ingredient.

It’s not that unusual, but I made a Pooh cake for my son’s birthday a long time ago. It took hours and hours to decorate and was the most frustrating thing ever. That was the first and last time for Pooh.
Made a spirulina cake. It was a very interesting color…
For my best friends bachelorette party, we made a cake out of a mold shaped like a certain body part . . .
Rainbow cupcakes…they were unusual and a big hit! 🙂 http://iwasborntocook.blogspot.com/2011/02/happy-birthday-nicky.html

i made a panda cake!
the most unusual cake I’ve ever eaten was a chocolate avocado cake with avocado buttercream frosting-it was weird, but delicious!
Most unusual cake I’ve ever eaten.. Hm, this is making me think I’ve only had normal cakes! I once made a rainbow cookie – cake… is that unusual? I made it look like water with bubbles and put rubber duckies on it for a baby shower. PS – I’ve been in love with this sandwich cake pan since I first laid eyes on it!
Years ago I made a carousel cake for my niece’s b-day. I found metal straws that I used as the poles and drew carousel horses (using edible ink) on wafer paper.
Happy Blogaversary!

When I was growing up we made a cake with cake mix, cream cheese and canned pie filling. Sounds like a weird pie, right? But it’s awesome. You make a yellow cake, can be with cake mix or not, frost it with cream cheese frosting, and pour canned blueberry pie filling between the layers and over the top. Amazingly moist and delicious.
So far, I have made
-A bikini cake for my brother’s birthday
-A rainbow cake for my Mommy’s birthday!
-An Xbox cake for my other brother’s birthday(along with a rice crispy controller)
-A shoe cake on top of a shoe box for my stepmom
-A cake shaped like a certain male body part(Don’t tell my mom!) for a friend getting married
-And a giant cupcake just for fun!
Love your blog!
When I was really young, my mom made a cake shaped like a lion’s head for my cousin. It was so cool. She never made anything like that for me. 🙁
I love peas. Like, peas in a pod. Or cooked. Or frozen in the bag.
My (lovely) friend decided to honor my birthday by making me a homemade treat. She thought and thought about things I loved. And settled on pea cupcakes. Yes, pea cupcakes. Frosted with sweet and tangy cream cheese frosting.
I wish this was a story I could end by saying they were actually delicious, but sadly, that would be a lie.
After one seemingly monstrous, strange bite, I settled for for the tiramisu cupcakes she had also baked, which were delicious.
Happy blog-aversary! I really enjoy reading/looking the recipes you post (thanks!).
The most unusual cake that I make is a Napolean Torte. It’s very rich & delicious, and takes quite a bit of time to make. I make it for special family celebrations. The sandwich cake pan is cute!
(I’m going to follow you on Twitter as well!)
I think the most “unusual” cake I’ve ever made is a Red Velvet Cake with cream cheese frosting and fresh blueberries on top for a Fourth of July party. I live in Northern California, so Red Velvet isn’t well known up here.

I recently made a pineapple upside-down cake in a cast iron skillet. It was really, really good!
We made all sorts of shaped cakes growing up – and I still make a turkey shaped cake every year for Thanksgiving! I am sorry to say, though, that I don’t nthink I have ever made or eaten any cakes taht were too bold or adventurous… I am not sure how far Iwould go, even in the name of cake…!
probably the strangest cake I made was the first “decorated” cake for my daughters 3rd birthday, tried to do a princesses cake……VERY interesting turn out!!!
