Cooking On the Side is one year old today! What better way to celebrate than with the best vanilla cupcakes I’ve ever made and a bakeware giveaway?
I started this blog after becoming intrigued by all of the recipes I noticed on the side of the food packages in my pantry, fridge and freezer. After writing Panini Happy for a little over a year I felt a yearning to explore food blogging beyond sandwiches. “Revealing” these recipes has been an incredibly rewarding (and tasty!) ongoing project – thank you all so much for your thoughtful comments, for sharing the recipes and for coming along for the ride.
And now for the giveaway…
I love my Calphalon cookware and bakeware and have used it to prepare pretty much every dish on this blog. So in honor of my 1st anniverary on Cooking On the Side I want to send one lucky reader a Calphalon Classic 5-Piece Bakeware Set.* It includes the following:

Vanilla Cupcakes with Chocolate Buttercream Frosting
Adapted from the 1-2-3-4 Cake recipe on the back of the Swans Down Cake Flour box
Makes about 1-1/2 dozen cupcakes
Cake:
INGREDIENTS:
1/2 cup butter, softened
1 cup sugar
1 1/2 cups sifted cake flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 eggs
1/2 cup milk
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
DIRECTIONS:
Preheat oven to 350Β°F. Place cupcake liners in muffin pan.
In a mixing bowl, cream butter and gradually add sugar, creaming until light and fluffy. Add eggs one at a time, beating well after each addition. In another bowl, sift flour with baking powder and salt. Add flour mixture alternately with milk and flavorings to creamed mixture, beating after each addition until smooth.
Fill cupcake liners 2/3 full. Bake for about 20 minutes or until a toothpick inserted in the center of cupcakes comes out clean. Cool in pans 10 minutes. Remove from pans and finish cooling on racks.
Frosting:
INGREDIENTS:
3 3/4 cups confectioners sugar
1 stick of butter, softened
3-4 tablespoons milk
1 teaspoon vanilla extract
2 ounces unsweetened chocolate, melted and cooled
DIRECTIONS:
Combine in a large bowl, confectioners sugar, butter, milk and vanilla. Beat at medium speed 1-2 minutes until creamy. Add chocolate and beat until well blended. If necessary add more milk 1 tablespoon at a time to reach desired spreading consistency.

I made pork shoulder braised in stout. It was absolutely delicious and hearty.

Best thing I made all year is chicken soup with cornmeal dumplings from Pioneer Woman.
I would have to say The Best Brownies Ever from your site. A new fav for sure. Occassionally I sprinkle them with course sea salt, YUM-E!
Probably Pioneer Woman’s Beef Brisket…though there are few other things were just as good, so it’s a tough call!

I can’t believe that it’s already been a year since you started cooking on the side .. my oh my how time flies by. I’m having trouble narrowing it down to one thing … but I’m going to have to … smoked pork butt would have to be my top choice, followed closely by kielbasa casserole and chicken curry

The best dish that I BAKED this year was a vanilla cake with a chocolate-Bailey’s frosting, topped with homemade mini M&M cookies. It was a b-day cake for my brother-in-law. (The vanilla cake was a recipe from Magnolia Bakery… all from scratch!)
Oooh, this is a tough question! I’d have to go with turkey pot pie based on Thomas Keller’s recipe in Ad Hoc. It was a lot of work, but totally worth it!

Definitely the homemade pizza we make every Friday. We start with homemade sauce, using home canned tomato base, and then hubby makes the dough and I get it all prepped and man, I can hardly wait for tomorrow! Mmmmmm…
But, I was given a couple really tasty Irish Soda bread recipes last week and the kids LOVED that as well….something a little different.

It’s so simple, but every time I bake buttermilk pie, it gets eaten in about 10 seconds π
The best dessert I baked has to be the chocolate mousse cheesecake I made for my birthday. I will never forget it, and I cannot wait to make it again.

A lemon meringue pie for my husband

My blintz casserole that I make every year for Christmas morning brunch. I bake it in my old tried and true 9 x 13 glass pyrex dish.
The warm cream cheese crouton, pommegranite seed mixed green salad has to be one of my favorite new dishes I’ve made this year. I think it was from Sunset magazine.
According to my husband, snickerdoodle bars! He and my in-laws polished off an entire 9×13 dish in one evening.
hmm. that’s a toughie. i’d have to say that it’s the coconut-happy carrot cake i made last week but haven’t yet posted. the most surprising thing of all is that no cream cheese frosting was involved! π
