Yes, it’s a CAKE!
That seriously looks like a real peanut butter and jelly sandwich, doesn’t it? No kidding, within 1 minute of seeing Sneh’s Cakewich (that’s what this is called) on Cook Republic, I had one-click ordered a Cakewich pan from Amazon. This blog turns 2 years old today and I’m celebrating with a fun, toddler-approved cake (at least the toddlers who live in my house loved it)!
As cute as it is, this cake tastes even better. In fact, I delighted in this pound cake as much as with the Meyer Lemon Whipping Cream Pound Cake I raved about a few weeks ago (yes, it’s been a pound cake kind of month). The cake itself is very moist and flavorful – even after five days at room temperature on my kitchen island – and that frosting is like peanut butter’s richer, sweeter, fluffier cousin. It’s definitely more than a gimmick, this cake is legit. If you’d like to see how I made this massive cake sandwich, check out today’s post on my other blog, Panini Happy.

Peanut Butter & Jelly Pound Cake
From the CAKEWICH silicone baking pan box
Prep time (including cooling): 2 hr 30 min | Cook time: 1 hr 10 min | Total time: 3 hr 40 min
INGREDIENTS:
Cake:
- 2 cup all-purpose flour (spoon flour into dry-measure cup and level off)
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 1/2 cups sugar
- 2 teaspoons vanilla extract
- 6 large egg whites
- 3/4 cup milk
Frosting:
- 1/4 cup unsalted butter, softened
- heaping 1/2 cup creamy peanut butter (I would not recommend using natural peanut butter)
- 3/4 cup confectioners sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup fruit jelly, slightly warmed
DIRECTIONS:
For the cake:
- Set rack at the middle level and preheat oven to 315Β°F.
- Grease and flour the inner bottom surface of your CAKEWICH cake pan.
- Combine the flour, baking powder and salt in a bowl, mixing well with a whisk.
- Whisk together the egg whites and milk by hand in a medium mixing bowl until just combined.
- In a heavy-duty mixer, cream butter and sugar until light and fluffy, about 5 minutes. Add vanilla and beat vigorously.
- Reduce speed to low and add one-quarter of the flour, then one-third of the milk mixture, mixing until just combined, scraping down the bowl and beater after each addition. Repeat until all ingredients are just combined.
- Scrape the bowl well with a large rubber spatula. Pour the batter into the CAKEWICH pan and smooth the top.
- Bake for about 60 to 70 minutes, until a toothpick inserted in the center emerges clean.
- Cool the cake in the pan on a cooling rack for one hour, then unmold it to finish cooking right side up.
For the frosting:
- Place the butter and peanut butter into a medium bowl, and beat with an electric mixer for several minutes until combined.
- Gradually mix in the sugar until combined.
- Add vanilla and beat for 3 minutes until fluffy.
To assemble:
- Using a serrated bread knife slice off the CAKEWICH “dome” then slice again through the center horizontally.
- Spread the peanut butter frosting on the first layer of cake. Spread a thin layer of jelly on top of the frosting.
- Place second layer of cake on the first, making sure the cut side is visible. For easier cutting, refrigerate cake for one hour before serving.
That is so cute!! I made a big hamburger cake one time. It didn’t turn out so great. It was a huge mess really. I had much better luck with the hamburger cupcakes. They are much easier and cuter too!

I literally just let out a gasp when I saw this pan. LOVE it!
The most unique cake I’ve made was a giant Oreo. Not very original, but it was for me at the time. π

Baked a cake for my nephew once and did it all up as a red race car. Also did a graveyard birthday cake (hear lies her youth) for a friends 40th.

Just wanted to say Happy Blogiversary, Kathy! You’ve certainly supplied me with a lot of delicious recipes over the past 2 years. Looking forward to another 2. π
What a fun cake! Congrats on two years!
wow! this is def the most unusual cake i have ever seen π really cute!
oh, and i “like” u :p
wow this is so cute! I would love to make a huge PB&J for my co-workers! They always say I have the most fun things to bring to work and this would definitely be one of them. The most unusual cake I have made is a checkerboard layer cake. It had 3 different pans and 2 different cakes in different colors. It was a little difficult to prevent the cake from bleeding into the other separator, but it sure was nice looking!
I’m dying to make the 7 layer rainbow cake, it just looks so pretty! But this looks equally as fun, a cakewich! π
I split a 9 inch circle cake into two half circles, roughly frost and pour shredded coconut on to make a bunny cake. Marshmallow tail, jelly bean eyes, small licorice string whiskers and ears made from a styrofoam plate and you have a bunny π

While living in Japan, a friend and I made the “Hamburger Cake” for a party. As I recall, finding the required ingredients, or at least asking for them, was a little challenging. However, it turned out fabulous!

It isn’t too unusual, however, it was my son’s bday and we were snowed in. I had a roll of cookies you could slice/bake. I made a ’round’ cookie cake from slicing and putting the dough touching. Made up a batch of icing and piped on with a ziplock baggie. I still have printed photos somewhere of that ‘cake’.
Congrats on 2 years! I think my 3 yo would LOVE a PBJ cake!
I liked you on FB! I was already a panini happy friend. So glad to find this one too.
I didn’t make this cake, but I saw one that looked like a basket full of MD blue crabs. So cute! And delicious too! P.S. I follow you on FB and Twitter too! :o)
The most unusual cake I have had is the giant cupcake. I have the mold for it and absolutely love making it.
I already subscribe.
Kathy, that is the cutest cake!! Great job on it. I bet kids and adults alike would go nuts for it. I’m so curious as to what it would taste like, myself! π Thanks for sharing your talents.
I love this cake! I always make a “fun” cake for my kids birthdays. One of my favorites was a giant sushi roll cake for my son.
I would love to have this product. I bake alot for my nieces and nephews
and I know they would love eat a peanut butter and jelly poundcake. This product
is so great.
The most unusual cake I’ve ever eaten came from the Erotic Bakery in Seattle. *sigh* My Bachelorette party… I would post a link, but they are quite inappropriate and not “erotic” at all. (Though it did provide some laughs!)
The coolest cake I’ve ever made was a jack-o-lantern cake. it was on the cover of some women’s magazine a couple of years ago and looked so fun my kids & i decided to try it. it was round, made out of pumpkin cake, frosted with orange frosting and then we stuck orange M&Ms on the outside of it to finish it off. we used yellow m&ms to make the eyes, nose and mouth. The “stem” was a snicker’s bar. it was delicious and fun…almost too fun to eat π
i havent really made an unusual cake, i made gingered pear and blueberry crumble last week, that was my most unusual creation and that was unusual enough for me!lol!!!
I would love to make this cakewich…….
Sounds like lots of fun and good to eat.
Fran
Weirdest cake I’ve ever seen was probably a Jabba the Hut cake at a wedding. Nuts!
Several years ago I made a Cookie Monster cake for my son. This pb&j cake is so cute!
The strangest cake I’ve ever seen was made to look like a plate of spaghetti and meatballs. Thanks for having the giveaway. I do a lot of baking for church and this would be a fun thing to add.
