Things That Made Me Go Mmmm… #4

Let’s call this the “Stroke of Genius Edition” of Things That Made Me Go Mmmm…a couple of brilliant ideas that stopped me in my food blog browsing tracks recently.

>> Have you ever caramelized onions in the slow cooker?? Me neither. But how smart is that?! I absolutely love having a stash of sweet caramelized onions on hand to add to sandwiches, pizzas, pastas. The only problem is that it’s hard to find time to stand over the stove for an hour while they cook. As Kathy from Electrified Cooks describes the slow cooker approach, “Just thinly slice sweet, yellow onions and put them in the Crock Pot with just a little olive oil and butter. Cook on the high setting 6 to 8 hours and you will have wonderful caramelized onions.” I’m so doing this!

>> Using toasted marshmallows to “frost” cupcakes. Again…brilliant! I don’t know what entices me more – giving cupcakes the s’mores treatment, or the ability to frost a whole batch in a matter of minutes. Yet another creative gem from Kate at Framed Cooks.

  1. This is brilliant!! A few weeks ago I made a pizza that was totally covered in Carmelized Onions. And then a layer of Swiss Cheese. (Yes, it was amazing and I wrote about it on my blog.) In fact I think I cooked down about four pounds of onions for this experiment in deliciousness. I spent two hours checking on the onions about every 10 minutes or so. I would certainly use ’em more often with an easier way to make ’em – like this. Thanks for a great idea.

    I’ve caramelized onions in the slow cooker for French Onion Soup…but apparently I’m a little slow because I never thought to not take the next soup steps and just keep the onions for other things! Doh!
